Temperature gauges affixed to mechanical dish machine noted in poor repair and not able to measure wash and rinse temperatures. Dish machine is a low-temperature machine, equipped with chemical sanitizer, and is able to reach the minimum required rinse temperature of 120 degrees during operation (Repair of temperature gauges is required). Establishment had no hot water at time of inspection. (Establishment was open and operating with no available hot water at time of inspection. All employees were immediately directed to stop all food handling and preparation. Manager reset hot water tank. Water temperature increased from 115 degrees to 160 degrees within approximately 10 minutes; and additional 5-10 minutes was required until hot water was available at the closest preparation sink. Once hot water became available, all employees washed hands and resumed food service activities. Food service was temporarily interrupted, but establishment did not require closure at this time. Manager set-up temporary hand wash station with heated water to account for intermittent hot/cold water available at various sinks. Repair professionals arrived within 30 minutes and corrected settings to ensure hot water was available at all faucets. Repair professionals also identified a small repair required, and estimated that repair work would be completed within the hour; repair work did not require any disruption to water service. Employees and manager informed that hot water must be available at all times during food service operation; for future, lack of hot water requires immediate correction or facility must close). Plumbing pipe noted leaking above bar and dripping onto bar counter surface (repair professionals onsite stated the repair work was scheduled and would be completed within the week). Wall behind dish machine is noted not clean.
