Shake Shack opens second outlet here with new offerings - The New Paper

Shake Shack fans rejoice, as it opens its second shack at 89 Neil Road on Feb 7 at 7.30pm.

In conjunction with the fine casual restaurant’s launch, the highly-anticipated Chick’n Shack and two new exclusive concretes, Eye of the Tiger and Open Sesame, will make their debut.

The Chick’n Shack ($9.20) is a crispy 100 per cent all natural and antibiotic-free chicken breast slow-cooked in a creamy buttermilk marinade and crisp-fried.

The chicken is then topped with shredded lettuce, pickles and a tangy buttermilk herb mayo, and served on a pillowy potato roll.

It is available exclusively at the Neil Road from Feb 7 to 9, then additionally at the Jewel Changi Airport from Feb 10.

Meanwhile, Eye of the Tiger and Open Sesame ($7.50 for single scoop, $9.50 for double scoops) were created based on local flavors.

The former features vanilla custard blended with lychee, raspberry and shortbread, topped with lime zest, while the latter is vanilla custard blended with black sesame paste and Plain Vanilla brownies, topped with black sesame seeds and gold-dusted chocolate.

Housed within a three-storey building that was previously home to the Eng Aun Tong factory where Tiger Balm was made, the 89 Neil Road Shack’s unique and charming design is inspired by the vibrant surrounding Chinatown and colourful Peranakan architecture.

'Roti, kapra, makan and internet': Ex-Google executive's vision for Digital Initiative - The Express Tribune

KARACHI: In its latest efforts to strengthen the digital landscape of the country, Prime Minister Imran Khan on Thursday launched ‘Digital Pakistan’ aimed at introducing the latest technology for public welfare.

The project will be headed by former Chief of Staff and Head of Strategic Initiatives on the Next Billion Users (NBU) team at Google Tania Aidrus, who left her very well-paying job and has come to Pakistan to head Digital Pakistan on the request of the premier.

Before her appointment at Google, Aidrus co-founded ClickDiagnostics— a mobile health diagnostics company that connects patients in rural areas to doctors around the world.

“A person I knew told the prime minister about me and forwarded an email to his reform team to contact me. Over the next course of months, I was in contact with Jahangir Tareen and members of the federal cabinet. I even met the president before I met Prime Minister Imran and discussed the project,” Aidrus said during the launch ceremony.

She stated that the Pakistan Tehreek-e-Insaf-led government was taking roti, kapra aur makaan a step forward to roti, kapra, makaan aur internet considering access to internet a right of every Pakistani.

She highlighted the strong role middle-income group plays in the country’s economy and the high rate of consumer spending but also added that there was a lack of technological penetration which is a major setback.

“Technology is a fast-growing sector that accumulates to a billion-dollar enterprise, there are around 70 million broadband internet users and yet the tech industry is not able to cater to this growing number,” she added.

Aidrus underscored the importance of government providing an enabling environment for the immense tech talent the country has.

Speaking about connectivity and internet across Pakistan Aidrus said: “A soldier posted in Siachen gets one opportunity a week to speak to his family members. I want to ensure that whenever he connects to his family via a video call, he is able to do so without any issues.”

She further said that she wants to “put Pakistan on the map” as far as technology and innovation were concerned while emphasising on the fact that new tech startups should be allowed to open bank accounts and complete the paperwork required in order for them to officially launch.

Under the leadership of Imran Khan, PTI has focused its energy in launching citizens portal that was to help Pakistanis in reaching government offices and it comes as no surprise that the head of ‘Digital Initiatives’ also discussed that Rs 3 trillion is wasted each year on the procurement that our government offices require that is largely paper-based and all of which could be saved and invested elsewhere if everything was digitised.

Aidrus also focused on ease of conducting businesses and attracting investors that would eventually bring big companies to Pakistan.

Price-fixing prosecutions under Trump are at a historic low for third year - Los Angeles Times

Criminal prosecutions for price-fixing under President Trump have remained at historic lows for a third consecutive year, a drop-off in enforcement against big business cartels not seen since the 1970s.

The Department of Justice announced 25 new cases alleging criminal violations of U.S. antitrust laws in fiscal 2019, according to a tally of public filings by the Financial Times.

The figure, an improvement on 2018, meant the Trump administration has brought fewer criminal antitrust prosecutions than any U.S. government for almost half a century.

The persistent slowdown has come despite assurances from Makan Delrahim, chief of the antitrust division since 2017, that he is committed to criminally prosecuting price-fixing and cartels, a realm of competition law that has historically had bipartisan support.

“Criminal enforcement can be resource intensive, but it is one of our most powerful deterrents,” he told the Senate in September, noting that crimes such as price-fixing “reduce faith in the free-market system.”

Criminal fines for antitrust violations have also dropped off dramatically over the last three years. In 2019, the division levied penalties of $300 million, according to the FT’s analysis, an improvement on its previous figures but otherwise the lowest total since 2004.

A Justice Department spokesman declined to comment on the enforcement figures.

“At a time of almost unprecedented corporate consolidation, it’s troubling that the number of antitrust prosecutions pursued by the Justice Department remain at record low levels,” said David Cicilline, the Democratic chair of the House antitrust subcommittee.

“Working people should have confidence that the federal government is fighting for them,” he added.

The division’s prosecutions in 2019 included some cases of large-scale price-fixing involving products such as seafood, computer hard disc drives and fuel for military bases in South Korea.

They also included smaller investigations. Six of the cases identified by the FT related to items such as insulated sleeves for beer cans and temporary tattoos.

The decline has accompanied a significant reduction in the number of attorneys and other staff in the units of the antitrust division responsible for criminal enforcement.

As of the end of July, staffing in the five criminal enforcement units had fallen a fifth since Trump took office, with attrition in two Washington-based units more severe, according to figures released in response to a public records request.

The drop was the result of a hiring freeze that was lifted earlier this year, which had resulted in total staff numbers falling to under 600 from more than 700 at the start of the administration. “They’ve been able to hire a little bit but they’re still way below the numbers a few years back,” said one former official.

A Justice Department spokesman said the division had been “in the process of hiring new attorneys since Atty. Gen. [William] Barr removed the hiring freeze.”

“We are pleased that we continue to select from a very strong pool of candidates and have made offers or onboarded over 20 new attorneys across the division,” the spokesman added.

Under the Obama administration, the antitrust division racked up dozens of new cases each year and billions of dollars in fines from investigations into auto parts and financial services.

As those long-running probes have come to a natural end, the latest investigations the division has focused resources on have failed to produce significant new cases to replace them.

After years of looking into alleged price-fixing by generic pharmaceuticals manufacturers, the division has announced only three prosecutions. Two executives admitted price-fixing in 2016 and the third case, this year, was a plea by the company they ran.

The division’s criminal probe into the use of no-poaching agreements has failed to produce a single case, despite Delrahim warning in January 2018 that “in the coming couple of months you will see some announcements.”

When he appeared before the Senate in September, Delrahim said the criminal program had been “very active” and pointed to 91 pending grand jury investigations at the end of fiscal 2018 as “the highest total since 2010.”

Criminal antitrust enforcement has long relied on companies coming forward to admit their involvement in price-fixing, a crime that is not always easily detected from external signals.

The carrot of immunity for the first participant to come forward has typically been matched with the stick of a hard-line policy that cases otherwise can be settled only with a guilty plea to a criminal charge.

In July, Delrahim announced a policy shift that allows companies to instead settle with a deferred prosecution agreement in certain circumstances. Antitrust defense lawyers have argued that the leniency program has become less effective in recent years as the practice has spread across the world.

A multinational company admitting price-fixing today will face legal action in multiple countries, reducing the advantage of attempting to draw a line under a matter by coming forward.

Some former officials worry that the prolonged downturn in prosecutions will further tilt the balance away from companies coming forward to disclose wrongdoing.

“The more and longer DOJ does not look to be aggressively prosecuting, the less incentive there is to rush in for leniency,” said Lisa Phelan, a partner at Morrison & Foerster who was previously chief of national criminal enforcement at the antitrust division.

Makan Kakis recommends: Heavens appam at Ghim Moh Market - CNA

If you live in the West, chances are you’re already familiar with Ghim Moh Market. It’s a veritable treasure trove of all things delicious, including chwee kueh, Hokkien mee and roasted meats.

But there’s one breakfast option that has come highly recommended by our GOLD 905 Makan Kaki, The Fabulous Baker Boy co-owner and chef Juwanda Hassim. He swears by the appam found at a stall called Heavens, which has garnered a steady following since it opened back in the '90s.

CNA Lifestyle kicks off a brand new Makan Kakis series with GOLD 905 DJ Denise Tan to find the yummiest local food in Singapore. This week: Absolutely divine appam with spicy tomato chutney from Heavens food stall.

For the uninitiated, appam is essentially a pancake made from a fermented rice flour batter that is delicately cooked on a hot griddle (appachatti) that looks like a mini-wok. This traditional Indian snack resembles little UFOs or sombrero hats and are both fun to eat and fun to watch being made.

Appam may look deceptively simple, but these require the right timing and lots of talent to make; something Heavens’ Madam Muthuletchmi Veerapan – or Madam Letchmi to regulars – and her son Suren have in spades as they showed us how to do it.

First, the batter has to be of the right consistency, so that one deft splash into the pan coats the sides with a thin layer that crisps up beautifully, while the remaining batter collects at the rounded bottom and cooks to fluffy perfection. Flavour-wise, there is a hint of sweet, rich coconut milk that cuts through the delightful zing from the fermented dough. 

The result is a light, tangy pancake that has lovely, paper-thin crisp edges and a pillowy centre that puffs up due to the fermentation at work.

When paired with orange sugar and freshly grated coconut, you get a dish that is simple and comforting, yet complex in flavour.

Heavens’ appam (S$2 for two pieces) is very savoury with a slight tang, while also offering different textures to enjoy – from its lacy-crisp edges to the steamy-spongy centre that is perfect for dipping into the sugar and coconut, for an added sweet and fragrantly creamy layer of taste.

If you want a less traditional way of enjoying appam, there are more savoury options, such as cheese, egg and butter variants (S$2 per piece). Or you can have it all – the irresistibly decadent “Princess” appam (S$3 per piece) features melted cheese, butter and a fried egg to top it off – like a crown, hence the royal title.

Heavens’ curries are the perfect accompaniments to the appam and on our recent visit, we had eager regulars fighting to tell us what to order and why they love having breakfast there.

“It’s the best Appam you’ll find in Singapore,” one of them said. 

“I come here all the way from Serangoon to eat here once a week!” another chimed in. 

“You must have it with the dhal and the spicy tomato chutney! Taste and you’ll see why,” said a third.

We can confirm the dhal was light, flavourful and not too spicy, with generous chunks of potato along with the lentils. But the star, for us, was the chutney that had a robust flavour from the tomatoes, deepened with the richness of onions, dried red chillies and other spices. Taking it to another level was the char that came through, lending this sweet, savoury and spicy chutney a delightfully deep smokiness.

If you still have room after all that appam, their putu mayam (S$2 per two pieces), thosai (S$2 per two pieces) and thosai variations (S$2 to S$3 per piece) are popular, too. In fact, on the morning we visited, half of the customers ordered masala thosai (S$2.50 per piece).

Heavens certainly lives up to its name with food that tastes divine.

Singaporean University Students Create Makan Rescue App To Help Fight Food Waste - Green Queen Media

A group of sustainability-minded students in Singapore have recently created an app called Makan Rescue to alert users to free leftover food nearby that would otherwise go to waste. Singapore, like many cities, is guilty of throwing out tonnes of food. The student-led initiative one of many positive steps arising in hopes of curbing food waste in the city. 

Makan Rescue is an app developed and maintained by a team of university students in Singapore. It allows users to locate the exact venue where there is leftover food to be rescued and view the spread of food available. Users can also add to the database of “missions” by uploading information of where more leftover food needs to be rescued in the city, as well as notify others about it.

The group of Singaporean students were motivated to create the app after observing that there was a huge amount of food waste after most university events. Their goal is to provide students with good quality free food as well as reduce the issue of food wastage inherent in many urban cities. While the app only currently available for free for students tertiary institutions in Singapore, including SMU, NUS and NTU, the group hopes to expand and release the app to the public after improvements. 

Apps such as Makan Rescue are a great step forward to help alleviate the huge food waste issue in the city. In Singapore, an average of 52 plates of nasi lemak are tossed out of every household every single year, according to a joint study by the Singapore Environment Council (SEC) and global consultancy firm Deloitte. In addition to ending up in the quickly overflowing landfill in Singapore, disposed food is typically sent to incinerators in the city. This process produces methane, a potent greenhouse gas that contributes to global warming.

With only 17% of food in Singapore being recycled in 2018, other community initiatives have also propped up in Singapore in hopes of promoting less food waste. Foodscape Collective, for instance, is a non-profit organisation hoping to raise awareness on food waste through public workshops on composting and non-food uses for veggies and fruit peels at home.

There are also initiatives underway in Hong Kong, where food waste is also a massive issue. According to Friends of the Earth, up to 40 percent of the city’s food goes in the trash, creating an estimated 3500 tonnes of food waste each day. To combat the problem, Dyelicious has diverted over 700 million tonnes of food waste to make colourful dyes used in arts and crafts workshops in the city. Local charity Feeding Hong Kong has also contributed to the cause by rescuing leftover food to provide over 7.3 million meals to Hong Kong’s hungriest.

Makan Rescue is an app developed and maintained by a team of university students in Singapore. It allows users to locate the exact venue where there is leftover food to be rescued and view the spread of food available. Users can also add to the database of “missions” by uploading information of where more leftover food needs to be rescued in the city, as well as notify others about it.

The group of Singaporean students were motivated to create the app after observing that there was a huge amount of food waste after most university events. Their goal is to provide students with good quality free food as well as reduce the issue of food wastage inherent in many urban cities. While the app only currently available for free for students tertiary institutions in Singapore, including SMU, NUS and NTU, the group hopes to expand and release the app to the public after improvements. 

Apps such as Makan Rescue are a great step forward to help alleviate the huge food waste issue in the city. In Singapore, an average of 52 plates of nasi lemak are tossed out of every household every single year, according to a joint study by the Singapore Environment Council (SEC) and global consultancy firm Deloitte. In addition to ending up in the quickly overflowing landfill in Singapore, disposed food is typically sent to incinerators in the city. This process produces methane, a potent greenhouse gas that contributes to global warming.

With only 17% of food in Singapore being recycled in 2018, other community initiatives have also propped up in Singapore in hopes of promoting less food waste. Foodscape Collective, for instance, is a non-profit organisation hoping to raise awareness on food waste through public workshops on composting and non-food uses for veggies and fruit peels at home.

There are also initiatives underway in Hong Kong, where food waste is also a massive issue. According to Friends of the Earth, up to 40 percent of the city’s food goes in the trash, creating an estimated 3500 tonnes of food waste each day. To combat the problem, Dyelicious has diverted over 700 million tonnes of food waste to make colourful dyes used in arts and crafts workshops in the city. Local charity Feeding Hong Kong has also contributed to the cause by rescuing leftover food to provide over 7.3 million meals to Hong Kong’s hungriest.

Makansutra: Original prawn vadai that's uniquely Singapore, Latest Makan News - The New Paper - The New Paper

The first thing boss Stephen Suriyah said before we began a proper chat was that he wrote to me in 2015 about featuring his prawn vadai in Makansutra's Deliciously Singapore.

That was a series of videos and recipes we filmed to highlight born-and-bred in Singapore makan, to honour our nation's 50th birthday.

I could not verify it then because I came across a vadai that looked similar, but with a blended and spiced chickpea paste as the base.

Then Mr Stephen's mother, Madam Jamuna Rani, recalled: "This is original to Singapore and created in Singapore. Many people sold it in the Farrer Park area in the 1950s."

I could not find this version even in our neighbouring countries 23 years ago when I first had it. So if I missed this, apologies to the migrants that gifted this to Singapore decades ago.

Mr Stephen, a 30-year-old millennial, decided to find a home base at Haig Road Market and Food Centre three weeks ago because "many customers do not like tracking and finding us all over the city every time we set up a pasar malam stall".

The Singapore-style prawn vadai is crispy outside and fluffy within, kind of like a prawn doughnut.

Small soft-shell grey prawns were originally used but Mr Stephen said that over the years, "the newer generation asks for bigger prawns as they are more Instagrammable".

Their Original Recipe stall began as a pop-up at pasar malams over the last 30 years.

The two most popular prawn vadai stalls at night markets and Hari Raya bazaars are theirs and Mr Vadai, which is run by their relatives.

But there are fewer such pop-up events and they now participate in only three a year so it is getting difficult to find such snacks.

It is amazing that this recipe, sold on a part-time basis, has helped Madam Jamuna raise a family for over 30 years.

I went back to Original Recipe three times just to check it was no fluke.

I like my prawn vadai a little fluffy inside and just teasingly crispy at the edges.

This one hits the spot.

The dough batter is made on site in small batches (50 at a time), set for half an hour and moulded. A huge prawn is pressed over it and then fried.

The prawn juice seeps in and the umami and savoury intensity is a selling point all by itself. It is also not overly salty. With the green chilli (be warned that a smaller but much spicier version is used), it is a symphony in the mouth.

Unlike his mother, Mr Stephen uses an electric fryer "because we are new-generation cooks" and also because he can better control the heat.

They offer an ikan bilis version as well, but I feel it is a tad saltier than I would like. There are also the plain kosong fried dough balls, which are great for children and adults alike.

US Justice Department teams up with states on probe of Big Tech firms - CNA

The U.S. Justice Department is working with a group of more than a dozen state attorneys general as it moves forward with a broad investigation into major technology companies, the department's antitrust chief, Makan Delrahim, said on Tuesday.

ASPEN, Colo./WASHINGTON: The U.S. Justice Department is working with a group of more than a dozen state attorneys general as it moves forward with a broad investigation into major technology companies, the department's antitrust chief, Makan Delrahim, said on Tuesday.

Delrahim said at a tech conference in Colorado the government is looking at previously approved acquisitions as part of a broad antitrust review announced in July of major tech firms with significant market power.

"Those are some of the questions that are being raised ... whether those were nascent competitors that may or may not have been wise to approve," Delrahim said. "Whether the intention of the incumbent was to purchase some of those competitors, I don’t know. I’m not privy to the facts of each of those investigations."

On July 23, the Justice Department said it was opening a broad investigation into whether major digital technology firms engaged in anticompetitive practices, including concerns raised about "search, social media, and some retail services online."

That was an apparent reference to Alphabet Inc's Google, Amazon.com Inc and Facebook Inc , and potentially Apple Inc .

More than a dozen states are expected to announce in the coming weeks they are launching a formal probe, a person briefed on the matter told Reuters.

"I think it’s safe to say more than a dozen or so state attorneys general that have expressed an interest in the subject matter," Delrahim said.

U.S. Representative David Cicilline, a Democrat who chairs a House panel that oversees antitrust issues, said on Tuesday, "Big tech platforms aren’t going to regulate themselves. I’m pleased that several state attorneys general are now conducting their own investigation into the dominance of these firms."

In July, eight state attorneys general met with U.S. Attorney General William Barr to discuss the effect of big tech companies on competition, and various antitrust actions.

The New York Attorney General's office said on Monday it is continuing to "engage in bipartisan conversations about the unchecked power of large tech companies." North Carolina's attorney general, Josh Stein, is also "participating in bipartisan conversations about this issue," his office said.

The department is looking not only at price effects, but also innovation and quality, and the next steps in its broad antitrust review would be seeking documents and other information and could include some compulsory requests, Delrahim said.

After the July announcement the companies under investigation "immediately reached out to work with us in a cooperative manner to provide information that we need as far as the investigation," Delrahim added.

The Federal Trade Commission in June told Facebook it had opened an antitrust investigation. Last month, the FTC resolved a separate privacy probe into Facebook's practices after the company agreed to pay a US$5 billion penalty.

'A couple of dozen' states are considering an antitrust probe of Big Tech, says DOJ official - CNBC

A top antitrust official at the Department of Justice said Tuesday that "a couple of dozen states" are interested in investigating Big Tech for antitrust concerns.

Makan Delrahim, the assistant attorney general for the antitrust division, said a large bipartisan group of state attorneys general spoke to the Justice Department about starting a joint investigation into technology companies.

"I think it's probably safe to say more than a dozen. A couple of dozen state attorneys general have expressed an interest in the subject matter," Delrahim said at the Technology Policy Institute's Aspen Forum.

The Justice Department announced last month that it is opening a review into potential antitrust concerns in the major online platforms, saying the review will "consider the widespread concerns that consumers, businesses, and entrepreneurs have expressed about search, social media, and some retail services online."

The Justice Department did not name specific companies that were under review, but shares of Amazon, Alphabet and Facebook all slumped immediately following the July announcement. The stocks of all three companies were down less than 1% on Tuesday, along with major market indices.

Delrahim said the Justice Department intends to work together with the states on their probe, adding that cooperation benefits all parties involved. There is not a set timeline for the investigation, Delrahim said.
