A restaurant operator for the town-owned building in Snowmass Village was announced on Thursday: It’s mix6, which will be run by chef and restaurateur Martin Oswald.
“Oswald has spent the last 25 years as executive chef to some of the Roaring Fork Valley’s most acclaimed and successful restaurants and is excited to bring his expertise to the new Base Village dining scene,” according to the statement.
Construction on the new restaurant and bar is scheduled to begin this spring “along with the other components of The Collective to allow for opening in time for next ski season,” it continued.
mix6 will offer a large outdoor patio with seating and views spanning from the adjacent ice rink to mountain scenes, including Hanging Valley Wall and the Cirque.
It was noted that East West Partners, which is managing the building and is part of the Snowmass Base Village ownership group, conducted a wide-ranging search to find the correct dining concept for The Collective.
“We looked at everything from fine dining to more casual concepts and interviewed restaurateurs as far away as New York City,” according to Andy Gunion, managing partner for East West Partners in Snowmass.
“Ultimately, it was Chef Oswald who presented an innovative concept that we felt was the most natural fit with this venue’s vibe and purpose as a community hub. We were also impressed with Martin’s strong local following and his deep experience in operating successful restaurants in mountain communities,” Gunion added.
It was noted that the restaurant needed to support the building’s mixed uses, which include live music, art, film and educational speakers; Oswald has experience catering events from local groups including Jazz Aspen Snowmass and the Aspen Art Museum.
“We were looking for a dining concept that matched this unique space and how it operates. We wanted fresh, healthy, high-quality ingredients served in a casual, comfortable setting that featured a simple, but sophisticated design,” Gunion stated. “A place where the entire community — families, locals and visitors alike — could come together to enjoy delicious, healthy food and drinks while enjoying all the activities and events found in Base Village and on the mountain.”
The restaurant’s name hearkens to allowing diners to “be their own chefs by selecting up to six ingredients, including vegetables, proteins and delicious homemade sauces that have been specially curated by Chef Oswald and prepared in small batches to assure quality. The ingredients will be ever-changing for what is available in season,” according to the release.
Oswald has worked with chefs including Wolfgang Puck during his long tenure. Most recently he has been affiliated with Pyramid Bistro in Aspen.
