Inspected on Aug. 28

At smoothie and ice cream station annex, prep table not able to properly cool prep top. Approximately 3 cups of diced pineapple, one small pan of leaf spinach, two cups of cut strawberry voluntarily discarded. Top of prep station at 57 degrees. Temp at blower motor at 57 degrees. Lower portion of cooler at 44 degrees. In walk-in cooler, food pans found double stacked lack hard covers. In customer lobby, fruit for sale is unprotected from contamination by public. Individual fruit for sale must be portioned by staff or individually wrapped. At sandwich station, employee drinks found in double door reach in refrigerator. At dish room, plywood box with chain unsealed and stained. Most cutting boards found throughout facility have deep gouges and heavy stains. Can openers found unclean. In dish room, clean sanitized utensils stored in plastic tubs with food debris. At sandwich station, handles of panini press found with dried food debris. At customer service counter, fronts and sides of preparation and cooking equipment, interior and exterior of pizza display case found with food smears and food debris. At sandwich prep ice table, food debris in water from previous serving day. At sandwich prep area, fronts of double door reach in cooler found unclean. At service counter, water in steam table found with food debris. In back kitchen prep area, lower shelves of prep tables and handles to all drawers found unclean. Most shelving, in all areas of the facility found not clean with corrosion and debris. In floor drain in front of the cookline, drain appears clogged and grate has food residue imbedded in grate. At sandwich station handwash, paper towels missing from dispenser. Fruit flies witnessed in several places in facility, especially at smoothie bar.
